: vegan meal of the week : apple nachos : week 55 :

happy monday!
this is the LAST monday before june!!
seriously, we are almost halfway through 2012.  nuts, right?

today, i have a simple dessert for you.
one of my favorite things about being vegan AND sharing these recipes is that i am super proud to share the great food we eat. i never feel deprived & my energy is through the roof. eating whole, 'real' foods, i never feel like i need to count calories or 'diet' since we are fueling our bodies so well.

recently, we had a picnic with friends & i brought these apple nachos as a dessert. we have a few friends [mostly in portland] that are vegetarian [all of blakes family is vegetarian], but NONE of our friends are vegan.

what you need : 
*3 crispy apples
*1 tsp lemon juice
*3 tbsp natural peanut butter
*2 tbsp 'not-tella' spread [justin's makes a really great dairy-free hazelnut spread]
*small handful of walnuts ; chopped
*small handful of coconut
**if you aren't using a veg hazelnut spread ; add a 1/4 cup vegan chocolate chips**



how to do it :
1) thinly slice apples ; lightly spritz with lemon juice to keep them from browning
2) melt pb & hazelnut spread [or chocolate chips] in the microwave or on the stovetop. drizzle over apples.
3) add toppings ; coconut, nuts, craisins ; anything you would like!

this is an easy 'picnic-y' summer dessert. also perfect for a pot luck or dinner party.
