: vegan meal of the week : week 11 :

usually, i do my vegan meal post on either dessert or supper
[cuz both are suuuuuper important]
but today, i am doing a quick [and healthy!] vegan snack.


pita chips with tabbouleh and garlic hummus
[this takes NO MORE than 5 min to prepare]


tabbouleh : lebanese salad made with bulgur wheat and finely chopped scallions, tomatoes, mint, and parsley
hummus : mixture of mashed chickpeas, tahini, oil, lemon juice, and garlic]

what you need : 
*whole wheat pitas [we use the holy land brand ; only found in minnesota i think?]
*store bought tabbouleh [ours comes from a middle eastern market, but you should be able to find it at a co-op, trader joe's or whole foods]
*store bought hummus [if you are new to hummus, be sure to check out flavors ; i would suggest plain or garlic for this recipe]

how to do it : 
1) take a piece or two of pita bread and rip it into thirds or fourths [small enough so it will fit into the toaster, big enough that it wont get stuck at the bottom..]
2) toast your bread [dont listen to your toaster; youll probably start your bread on fire. just count to 30-45, and pop your bread out.] once bread has cooled down, tear it into small-sized dipping pieces.
3) take a few tablespoons of hummus + a few tablespoons of tabbouleh and mix them together.
4) dip & enjoy!

so easy. this is a really great grab & go snack.
