im hoping it tastes as amazing as it smells!
this recipe came from alicia silverstones book, the kind diet [love this book, btw]
sugar snap peas, radishes, and edamame with lemon butter
[serves 6]
cook 2 cups sugar snap peas [trimmed], 1 cup shelled edamame, and 1 bunch radishes [trimmed and thinly sliced] in boiling salted [1/4 teaspoon sea salt] water for 1 minute. drain and rinse under cold water immediately to stop the cooking process.
heat 1 tablespoon extra-virgin olive oil in a large skillet over medium heat. add 2 tablespoon minced shallots, and saute for 2-3 minutes or until soft. add the drained snap peas, edamame, radishes, and salt and cook for 1 minute or until heated through.
remove from heat, and stir in 2 teaspoons finely grated lemon zest, 1 teaspoon vegan butter, 3/4 teaspoon umeboshi vinegar, juice of 1/4 lemon and 1/4 teaspoon freshly ground black pepper.
serve warm.
what i did differently : used a mixture of peas, carrots, green beans, edamame. used black radishes. peanut oil instead of evoo, onions in place of shallots. no lemon zest
*sidenote : this is waaaaay better with a dash of soy sauce*
