: vegan meal of the week : week 25 :

this week : 
tomato sandwich!

even if you arent vegan, i totally suggest you check out their site.
they have a billion recipes and such a great [and easy!] search engine.

grilled tomato sandwich : 

what you need : 
* 2 slices whole wheat bread
* 1 ripe tomato, sliced thin
* hummus, for spreading [you could use cream cheese or veg butter]
* black pepper, to taste
* healthy sprinkle of oregano
* healthy sprinkle of chives
* vegan butter
* garlic and herb blend spice [ i didnt use this!]

how to do it :  1) spread one side of each slice of the bread with a thin layer of hummus, butter, cream cheese. layer the thinly sliced tomatoes and onion over one side, pausing often to sprinkle with black pepper, and oregano.
2) sprinkle the other cream-cheesed/butter/hummus side of the bread with chives. lots of chives. close sandwich and spread outside sides of bread with vegan margarine.  

3) sprinkle with garlic herb seasoning in manner of garlic bread. grill like a grilled cheese sandwich. [i use the george foreman]
