we are members of the rock spring farm csa.
right now, we get the winter veggie share and the winter fruit share.
soooooo good.
we pick up two huge boxes twice a month.
the upfront cost of csas appear expensive [a months worth of rent?!] but it totally pays for itself.
we dont have to buy fruits or veggies. ever. [well, i still buy frozen blueberries and bananas every once in a while] we have to buy grains and spices and thats really about it for our grocery bill.
anyways, over the last three pickups, i think that we have acquired almost 10 pounds of cabbage.
each week, we get a newsletter with our pick-up, so that is where this recipe came from.
cabbage carrot slaw
what you need :
*1 pound napa or savoy cabbage [cored and shredded]
*2 carrots [peeled and grated]
*2 or 3 shallots [minced]
*1/4-1/3 cup olive oil
*2 tablespoons of lime juice
*1 teaspoon soy sauce
*fresh pepper ; to taste
*black olives [we used about 6-7 ; you can add/omit them, your choice]
how to do it :
1) combine vegetables in a bowl ; mix up
2) mix in olive oil, lime juice and soy sauce. add fresh pepper.
3) toss the veggies in the dressing, top with olives and serve.
suuuuuuuper easy.
for a bit more protein, we made two servings of grits//polenta and mixed it in.
[we use bobs red mill for our polenta]
