: vegan meal of the week : week 9 :

ok.
new week.
new vegan goodness.
i feel sooooo good with the foods we put in our bodies. i really do. i feel so lucky that blake loves cooking and eating animal-free meals.


todays meal :
hot rice with cold lemon, basil, and tomato.

what you need : 
*1 cup arborio rice [un-rinsed]
*2 tablespoons olive oil
*3 tablespoons lemon juice
*3 pinches of sea salt
*2 pinches of pepper
*1/2 cup fresh tomato
*2 tablespoons fresh basil


how to do it :  
1) place rice in a saucepan with 3 cups of water. bring to a boil, reduce the heat, cover, and simmer 10-15 min or until mostly tender but still a little firm in the center of the grain. drain off any water that was not absorbed, and transfer the rice to a mixing bowl.
2) add olive oil, lemon juice,  salt and pepper. add in fresh tomato, and sprinkle with fresh basil. toss to combine, and serve.

easy. and delish!
