[man, how is it monday ALREADY?!]
if you remember from this post, you know that we got 12 PINTS[!] of blueberries in our csa box last friday.
Blueberry-Banana Chocolate-Chip Bread

what you need :
*2 over ripe bananas
*2 tablespoons lemon juice
*1/3 cup plain almond milk
*1/2 cup agave nectar OR not-processed sugar
*2 cups whole wheat flour
*3/4 teaspoon baking powder
*3/4 teaspoon baking soda
*1 pint blueberries
*1 cup dark chocolate chips, veg chips OR semi-sweet chocolate chips
how to do it :
1) Preheat oven to 350F. Spray or wipe a 9×5-inch loaf pan with oil
2) Mix the almond milk with 1 tablespoon of the lime juice and let stand until it curdles.
3) In a large bowl, mash the bananas and add the remaining lime juice, milk, and agave nectar/sugar. Stir well to combine.
4) In a separate bowl, combine the flour, baking powder and soda. Add the dry ingredients to the banana mixture, and stir just until the mixture is well-combined. Fold in the blueberries and chocolate chips.
5) Spread the mixture evenly in the prepared pan and bake until a knife inserted in the center comes out clean, about 50 minutes. Allow to cool before cutting and serving.
