: vegan meal of the week : week 28 : zucchini tart! :

WAIT!
before you are like ; zucch tart? no thanks! ; keep reading!

i will tell you, this is one the most amazing things i have ever made.
[seriously]

we have so many stinkin' zucchini! they are delish, but i wanted to try a dessert.
here we go :
[i modified it to make vegan and healthier]

sweet zucchini crumble
serves 6-8

youll need : 
*4 1/2 cups whole wheat flour
*2 cups sugar
*3 tablespoons softened veg butter
*1 cup applesauce in place of more butter [if you want more sugar or butter ; you can do that]
*6-8 cups thinly sliced zucchini [about 4 large][i used two large and that was good enough]
*2/3 cup fresh lemon juice [about 3 lemons]
*1 teaspoon cinnamon
*1/4 teaspoon nutmeg [i used 1 1/4 teaspoon of JUST cinnamon]

to do : 
1) preheat your over to 350
2) stir in the flour, 1 cup of sugar in a large bowl until well combined. add the butter/applesauce and cut it into the flour until it all looks like course oatmeal.
3) pour half the mixture into a 9x13 pan [i used a pie pan]. using your fingers, press the mixture evenly into the bottom of the pan. bake for 10 minutes. remove the pan from the over and set it aside.
4) combine the zucch and the lemon juice in a large pot over high heat and cook until the zucch is tender [8-10 min]. stir in the remaining sugar and spice. simmer for 1 minute more. stir in 1/2 cup of the reserved flour mixture and continue to cook, stirring until mixture thickens. remove the pot from the heat to cool for 10 minutes.
5) pour the zucchini mixture over the baked crust and sprinkle with the remaining flour mixture. return the pan to the oven and bake until it is lightly browned and bubble, 40-45 minutes.

this turned out so, so good.
