: vegan meal of the week : week 46 : guest post from azia! :


happy monday!
today, i have azia here sharing one of her fave vegetarian // vegan recipes.
her directions are easy to follow & this is a great dish!

Spaghetti Squash and Eggplant Marinara

Ingredients:
1 Medium to Large Spaghetti Squash
1 Large Eggplant
3 Cups of Your Favorite Marinara Sauce
Olive Oil 
2 Cups of Shredded Mozzarella Cheese (to make this recipe vegan- simply substitute the Mozzarella with Diaya, etc...)

You will also need:
Cookie Sheet
Lightly Oiled or Sprayed Casserole Dish
Skillet


-Pre-heat your oven to 350 degrees.
-Split the spaghetti squash in half lengthwise (Use a sharp knife! This is similar to carving a pumpkin!)
-Scoop out the seeds and place squash on a cookie sheet, flesh side down.
-Bake in oven until squash feels tender to the touch (10-15 minutes, or so...)*
-Once the squash has been removed from the oven, let it cool enough for you to handle with your hands.
-Scoop out the stringy flesh into your casserole dish.  
-Salt and pepper the squash and add one cup of marinara over the top.


-Next, add 3-4 tablespoons to your skillet and heat the oil until it is hot.
-Wash the eggplant and slice into 1/4 inch thick slices.
-Place eggplant into skillet and fry until browned.  Flip them so both sides are evenly cooked.  (You may need to add more oil after you flip, sometimes the eggplant can really soak it up!)
-Drain the eggplant on paper towels and place the slices on top of the spaghetti squash.
-Salt and pepper the eggplant and cover with the rest of the marinara sauce.
-Sprinkle the shredded cheese over the top and bake in the 350 degree oven for about 30 minutes.



The Finished Product!

*You can also microwave the squash by wrapping it in plastic wrap, and poking holes throughout the wrapping, but I would not recommend this method!  Very time consuming!

This may seem like quite a few steps, but trust me when I see this is rather easy to put together and INCREDIBLY delicious to eat!  It's a favorite here at our house!  Hope you all enjoy it!
