lets start june off right with a great breakfast // brunch // dinner recipe!
last month, i bought this cookbook ; 'vegan planet' at our library book sale for $2!!
this book has over 400 [!!] recipes. i have already made a few & each has turned out really great.
i highly recommend this cookbook. its on amazon here ; or check out your local library!

today :
flax-berry pancakes
recipe from this great cookbook // serves 4

what you need :
*1 1/2c flour [i used whole wheat]
*2tbsp sugar or natural sweetener [i used turbinado sugar]
*2tsp baking powder
*2tbsp ground flaxseeds [we use bob's red mill]
*1/4c water
*1 1/4c dairy-free milk [i use vanilla-sweetened almond milk]
*1tsp vanilla extract
*1/4c fresh or frozen berries [we used mix berries ; raspberries, strawberries & blueberries]
**if you like MORE berries, add another handful**
how to do it :
1) in a large bowl, combine flour, sugar, baking powder ; set aside.
2) in a blender, combine flaxseeds & water. blend til thick ; about 30 seconds. add milk & vanilla ; process til smooth.
3) pour wet ingredients into the dry ingredients, mixing until just moist. fold in the berries.
4) spray skillet // pan & heat over medium heat on the stove. ladle about 3tbsp of batter, per pancake. cook 2-3 minutes. flip pancake & cook until browned.
**blake topped his with powdered sugar & i used peanut butter on mine**
these were super good! hooray for breakfast for dinner!!
