: vegan meal of the week : week 1 :

blake and i are members of a csa, and we get both fruit and veggies every two weeks.
we are so happy with our choice to eat more responsibly, to support local farmers and to branch out and eat new foods.

Potato and Rosemary Flat Bread.
recipe found in may 2010 issue of Real Simple // vegan modifications made by me

what you need : 
*1 package of whole wheat pizza dough [i use dough from trader joes]
*2 red potatoes, thinly sliced
*2 cloves garlic, sliced
*2 tablespoons rosemary leaves
*2 tablespoons olive oil
*salt and pepper to taste

how to do it : 
1) preheat oven to 425*
2) shape dough into large oval ; spray your baking sheet
3) in a large bowl toss potatoes, garlic, rosemary leaves & olive oil, season with salt and pepper.
4) scatter evenly over the dough and bake for 25-30 min.
