: vegan meal of the week : week 5 :

ohhhh, more cookies.
healthy, good-for-your insides cookies.

anyways, tonight, blake and i are going to watch some basketball. he loves the portland trailblazers. and they play here in mpls. i bought him tickets for his birthday.
so, today i made some power cookies. and cut them into heart shapes.

[i got this recipe from a friend. who got it from a friend that owns a bakery. my friend tweaked a few things. and then i tweaked a few things]


what you need :
*1 cup almond meal [i buy mine from trader joes ; just called 'almond meal'][dont have a trader joes? throw some almonds in a food processor and grind them into a powder]
*1 1/2 cups raw oats
*1 cup spelt flour [if you don't have spelt, you could use another kind ; but the spelt is a nutritional powerhouse!]
*1/2 teaspoon baking soda
*1/2 cup canola oil
*1/2 cup agave [you can add maple syrup if you dont have agave, but the agave makes it taste SO great]
*2 1/2 tablespoons vanilla
*1/2 cup dark chocolate chips [you can also use semi-sweet or carob]


how to do it : 
1) preheat over to 350 degrees.
2) in a bowl, mix almond meal & raw oats
3) add in spelt flour and baking soda. mix up the dry ingredients and then wet ingredients. mix it all up, till all the dry is combined.
4) i usually plop them down by the spoonful and then smoosh them out a bit.
bake at 350 for 17-20 minutes.

*if its been 20 min and you don't think they look brown enough, take them out anyway! they will end up too crunchy and you wont love them!*
