[it was soooo nice!]
we are dogsitting for a week, and they have comfy couches and a huge tv. so we spent HOURS watching toddlers and tiarras and millionaire matchmaker.

: lets make whoopie! [pies] :

so cheesy.
but, i couldnt help it.
[nobody really uses the word ..whoopie..]

i have to share this!
i found this recipe in bon appetit magazine.

i vegannized it and added a little less of some ingredients [veg butter, powdered sugar and sugar]
[if you want to know exactly how i veganized it, let me know, and ill share ;) ]

anyways, here is what mine look like!

[the mint filling is REALLY sweet, so i am not sure if i will actually eat them]
[*one thing you dont know about me : i love baking. but i rarely eat what i make. i only like eating the dough/batter. i dont care about the finished product. seriously.]

: my week in pictures : recap :

i just wanted to give a huge high-five to all the great humans that have been commenting, emailing, purchasing and being really nice to me. i really, really appreciate it!

this is what this past week looked like :

 i FINALLY got a new computer! one that wont ruin my files and freeze every 30 minutes!

 we took a mini-vacay up north and went to gooseberry falls, and a few lovely lighthouses.















 so, we stayed at the cove point lodge. we got a groupon a few months ago. get this : we paid $110. we got : a suite with a deck, a jacuzzi, a fireplace, a $50 meal credit, a free bottle of champagne, amazing views, great service and a free breakfast. seriously, best deal ever! i highly recommend them if you are ever looking for a sweet trip to duluth, mn.












 next weeks : i totally want to make that.

 and, some of you know. some of you dont. in the next couple years, blake and i are going to start the process of international adoption. ever since our second date, it has been what we want and what we believe in. we love haiti, and that is where we want to adopt from. anyways, we found this super cute toddler sweater at goodwill a while back and i have it hanging on my wall in the craft room. looks so cute.

 today : volunteering, neighborhood spring celebration, tons of sewing, a few errands and a trip to the post office!

: vegan meal of the week : week 10 :

happy supper!

tonight, we are making TWO dishes that use [almost] all vegetables!
both recipes come from chris blanchard, who is the head-guy, in charge of our csa [rock spring farm, in decorah, iowa]
[also, if you are in the mn/iowa area and are interested in joining a csa, either contact the farm, or let me know if you have questions. i really do think csa is the way to go; a million times over!]


tonight : 
rutabaga rosemary fries and italian red cabbage & parsnip soup

rutabaga rosemary fries :


what you need : 
*2 rutabagas
*olive oil [enough to coat fries]
*dried rosemary [a few sprigs]

how to do it :  
1) peel rutabagas and cut into 1/2-inch 'fries.' steam in a steamer basket over boiling water until just tender. drain and toss with a generous amount of olive oil and the rosemary.
2) lay the fries in a single layer on a cookie sheet, with none of the fries touching each other, and bake in a 400- degree over for about 25 min, turning them once in the middle. place under the broiler for about two minutes to brown them, salt to taste and serve.


italian red cabbage and parsnip soup : 


what you need : 
*1 can white beans
*1 tablespoon olive oil
*1 red onion, chopped
*5 cups cabbage, shredded
*1 cup parsnip, sliced
*5 cloves garlic, minced
*8 cups vegetable broth
*salt and pepper, to taste

how to do it : 
1) mash white beans with a fork.
2) heat olive oil in a soup pot, add onion and cook until soft. add cabbage, parsnip, and garlic; cook, stirring, until the cabbage is well wilted.
3) add vegetable broth, mashed beans & bring to a simmer
4) season with salt and pepper, ladle soup into bowls, and drizzle with remaining 1 tablespoon olive oil. [add vegan cheese, if you want]

both of these turned out super well. and there is TONS for leftovers tomorrow!

reads : homemade hummus pizzas. vegan donuts. gnocci. my grandmas apple pie [veganized]. homemade sushi and MORE spring rolls. bread.


day 20 : celebrity crushes : 

reads : macaulay culkin [swoon]. elijah wood. michael strahan [i love the gap in his mouth!]. nick carter. harry potter. jake gyllenhaal. john mayer.

day 21 : things to do this spring : 

reads : make vegan donuts. buy an slr camera. ride my bike for HOURS. plant a window-box garden. start training for a [two?] half-marathon[s]. read a lot of books.

day 22 : today i saw : 

reads : the cosby show. melting snow. a screaming baby [gross].

day 23 : guilty pleasures : 

reads : backstreet boys. not showering. eating chocolate chips straight out of the bag.

yesterday, almost all the snow was gone. it was rainy and blustery. today, we have gotten 6 inches of snow. and it wasnt even in the forecast! silly mother nature!
