: vegan meal of the week : week 18 :

wanna do brunch?

here is a fun recipe.
[also, if you DO eat dairy and eggs, this recipe is really easy to make 'non-vegan']
[but, the veg ingredients are super easy to find; so you could try the veg version ;) ]

i found this recipe from vegan yum yum. they have really great recipes AND a [free] iphone app.

today : berry crepes!

what you need :
*1/2 Cup Soymilk [I used dark chocolate almond milk]
*2/3 Cup Water
*1/4 Cup Earth Balance, melted [this is vegan butter]
*1 Cup Flour [I use whole wheat flour]
*1 Tbs Sugar
*2 tsp Vanilla Extract
*2 Tbs Water, to thin if needed


how to do it : 
1) Place all the ingredients in a bowl. Whisk until smooth. Transfer to a 2 Cup measuring cup (for pouring) and refrigerate for 30 minutes. While the batter is refrigerating, prepare your fillings.
2) Once your batter is ready, heat your pan/skillet medium-heat. Add a little non-stick spray. Pour enough batter to cover the pan [thin layer!]. Watch the batter, once it turns color and is thick enough to flip, flip it over!
3) Add a sprinkle of sugar and add in your berries [we used frozen blueberries]. Give it another minute or so, fold it in thirds and take it out.
These turned out delish! My crepe-flipping skills are NOT.GOOD [haha], but they tasted really good.
