: vegan meal of the week : week 21 :

breakfast muffins?
YES!

right now, we are running low on breakfast food in our house. and since we both bike to work, we def needs something sustainable.
last week, we got a handful of nectarines in our csa box.

today : Brown Sugar and Peach Nectarine Muffins

Brown Sugar and Peach Nectarine Muffins
Makes 12 Muffins
what you need : 
*2 Cups Flour (spelt or all-purpose wheat)  *I used 1/4c spelt, the rest whole wheat*
*1/2 Cup Brown Sugar
*2 teaspoon Baking Powder
*1 teaspoon Baking Soda
*1 Cup Almond milk *I used a tiny glug of plain and the rest dark chocolate*
*1 Tablespoon Lime Juice
*
1/3 Cup Oil

*1 teaspoon Vanilla Extract
*1/2 – 2/3 Cup Peaches, chopped (fresh or canned)
*Extra Brown Sugar, for sanding


how to do it : 
1) Preheat oven to 400 degrees.
2) Line your muffin tins with muffin cups.
3) Mix the dry ingredients together.
4) Whisk the wet ingredients together until incorporated and thickened. Add wet to dry and gently fold the until the flour is moistened and there are no dry spots. Add the chopped peaches and fold in gently.
5) Fill muffin cups 3/4 of the way. Sprinkle with extra brown sugar, and add extra nectarine pieces on top if desired. Bake for 18-22 minutes, or until lightly browned and a toothpick comes out clean. The centers should also bounce back when pressed lightly.

*dont have any fruit to add? just make these without ; be sure to add brown sugar to the tops before baking*
i may or may not have taken big spoonfuls of batter with brown sugar from the pan to 'test'...
and then, to compensate, i had to take spoonfuls from the ones i didnt touch ; so they would all match ;)
