: vegan meal of the week : apple quinoa salad : week 54 :

happy monday!
i hope you had a great weekend.
ive said it before [and ill say it again ;)] ;  minneapolis has SO MUCH going on in the spring & summer.
this weekend, there was an art festival, our neighborhood festival [+ a neighborhood garage sales ; with 105+ garage sales!] & a seed bomber bike ride.

today, i wanted to share a tasty recipe i found.
in our house, blake makes the dinner & i make the treats, desserts & energy bars.

i found this recipe for apple cinnamon cranberry quinoa & it was delish!


apple cinnamon cranberry quinoa salad

what you need : 
*1 cup dry quinoa [we get ours from trader joes]
*1 apple ; diced
*few hearty shakes of cinnamon
*3/4 cup orange juice
*1 cup water
*1/3 cup dried cranberries
*small handful of sunflower or pumpkin seeds
*small handful of chopped walnuts


how to do it : 
1) place quinoa, apple & cinnamon to saucepan ; medium-high heat
2) add water & orange juice ; stir to mix
3) cook covered for 25 minutes ; liquid should be absorbed [and your house will smell amazing!]. remove the lid for the last few minutes to let all remaining moisture out.
4) add cranberries, walnuts & seeds. serve warm.

this dish was SO good. super filling & healthy.
