: smoothie monday! : tropical swiss chard smoothie :

are you off today? big plans?
i *finally* have a day off, so blake & i are biking [20+ miles] to the minnesota state fair.
we have the largest [with bizarre foods] state fair in the nation. i am excited to eat funnel cakes, ride my bike & people watch for hours!


so, for the past year, i have been posting vegan recipes on mondays. 
sticking with the theme, but also changing it up a bit, mondays will now be 'smoothie mondays'.
since june, i have been drinking a smoothie a day [mostly for breakfast]. they are easy, cheap, delish & a great way to add fruits & veggies into your diet.

todays smoothie : pineapple swiss chard
recipe adapted from here // all modifications made by me
makes about 3.5 cups


what you need : 
*1 1/2 cups swiss chard leaves ; chopped & packed in
*1 large banana [add another 1/2 if you love bananas]
*1 cup frozen pineapple chunks
*1/2 cup frozen mango chunks
*1/2 cup frozen strawberries
*1-2 medjool dates ; pit removed ; chopped [you can find these at trader joes, most supermarkets & middle eastern delis]
*1 1/2 cups coconut milk [the kind in the carton, NOT in the can]

how to do it : 
*add it all in a blender & puree.
**if you dont love swiss chard, i suggest chopping the leaves into tiny bits ; that way they get blended well.**


its that easy! the health benefits of ALL of those fruits + the chard is enough to keep you energized throughout the morning.
