: vegan meal of the week : week 16 : minneapolis edition :

happy tuesday.

todays meal is kinda cheating is a restaurant post!


galactic pizza has GOT TO BE my favorite place to eat in all of the twin cities.
they have super hero delivery guys [seriously], deliver in electric cars, give you 3d glasses to view the menu, and they donate a percentage of ALL profits to local causes.
not to mention, they have de.LISH pizza.

they have gluten free, meat, veg AND vegan options.

our pizza [my FAVE] was the paul bunyon. 
[all minnesota, baby!]
[vegan] pizza =  homemade tomato sauce, topped with vegan cheese, morel mushrooms, wild rice, and free range [fakin'] bison sausage.

: vegan meal of the week : week 15 :

hungry?
two things first :
1) blake made these. i was crafting and he took dinner duty [hes so cool!]
2) i will probably make these again tonight! [so goood!]

today : homemade pita pizzas with whatever you want all the good stuff
[these are quick and easy and a great way to use up spices and veggies that are hanging around your fridge]

preheat oven to 300 degrees. take one large pita [per person!] and place it on a baking sheet. cover [untoasted!] pitas with pizza sauce. add chopped onions, garlic, olives, and rosemary. drizzle a bit of juice from the olives on top. tear a string cheese [if you ARENT veg] or add desired amount of veg cheese.
place in oven for 10-12 minutes, or when they are as soft or crispy as you want them!
enjoy!



* these are SUPER easy. you can add whatever youd like, or take off whatever you dont want. we have made these with spinach and peppers before also. and if you really love fake meat products [we dont], you can always use sausage or fakin' bacon as a topping. [fakin' bacon and pineapple makes a pretty sweet pizza]
