last weeks meal post was a recipe straight out of this great cookbook.
and so is todays.

today :
african sweet potato & peanut stew
[it looks like there are TONS of ingredients here ; but you should have most of these things at home already!]
what you need :
*1 tablespoon olive oil
*1 yellow onion ; chopped
*1 green bell pepper ; seeded & chopped
*1 clove garlic ; minced
*2 teaspoons brown sugar
*1 teaspoon fresh grated ginger
*1/2 teaspoon cumin
*1/2 teaspoon cinnamon
*pinch of cayenne
*2 large sweet potatoes ; cut into 1/2 cubes
*1 large can [14.5oz] crushed tomatoes
*1 1/2 cup kidney beans ; rinsed well
*1 1/2 cups vegetable stock
*2 tablespoons peanut butter
*1/2 cup roasted peanuts ; chopped
how to do it :
1) heat oil over med heat ; add onion & cover. cook until soft, about 5 minutes. add pepper & garlic ; cover and cook another 5 minutes. add brown sugar, ginger, cumin, cinnamon & cayenne, cook & stirring for 30 seconds.
2) add sweet potatoes & stir to coat. stir in the tomatoes, stock & salt [to taste]. bring to a boil, reduce to a simmer & cook until veggies are soft ; about 30 minutes. during the last 10 minutes, stir in the beans.
3) place the peanut butter in a small bowl & thin with about 1/4 cup of the hot broth, then add it to the stew. garnish with chopped peanuts.
this was super hearty & is a great stew for a wintery // rainy day!
