: vegan meal of the week : week 58 : the easiest [and most decadent] dessert EVER :

happy monday!
i hope you had a great weekend ; we did SO many great things.
lots of riding. farmers markets. summer festivals. & picture taking.

the title says it all.
two simple ingredients create a simple, healthy & really decadent dessert.
i made this the other night & it tasted better than any $7 slice of raspberry chocolate cake ive ever had when we have been out to eat!


today : raspberry chocolate coconut ice cream
what you need // how to do it : 


take a few scoops of this

a handful or two of these

and enjoy!

coconut milk ice cream gets softer after a few minutes, so its perfect conditions to mix the berries & cream into an 'ice cream soup' ;)
[ever since i was a kid, i have always mixed up my ice cream into a soup ; i love it!]


if you insist on dessert each night or are watching your calories, this is a great treat!

oh my goodness, i have been craving cake like its my job.
i really, really want to bake a cake.

so, what do i do?
i turn to pinterest.

: vegan meal of the week : week 2 :

so, this weeks meal is a dessert.
i got it from this book.
oat 'n' maple cream sandwich cookies
[vegan modifications made by me]


what you need : 
*1/2 cup vegan butter [i like earth balance]
*1 cup agave
*1 teaspoon vanilla
*1/2 cup firm tofu [pureed]
*1 cup spelt flour
*1/2 teaspoon baking soda
*1 teaspoon cinnamon
*1/2 teaspoon ground cloves
*1/2 teaspoon ground nutmeg

to make the filling : 
*1/2 cup vegan butter
*1/3 cup + 1 tablespoon agave
*1/3 cup almond milk
*1 teaspoon vanilla
*1 teaspoon maple EXTRACT

how to do it : 
1) preheat oven to 350*
2) in a large bowl mix butter, agave & vanilla. add in tofu & mix til well blended
3) add spelt flour, baking soda, and all spices. stir well.
4) drop batter in large tablespoons onto baking sheet ; flatten to make circles. bake 12-15 minutes.

while cookies are baking ; start on frosting.
1) in a large bowl beat butter til fluffy. [be sure to use an electric mixer]
2) add agave, continue mixing.
3) add milk, vanilla + extract. mix until fluffy

once cookies have cooled, spoon 1-2 tbsp filling on flat side of one cookie.
top with second cookie.
wrap individually in plastic wrap, or put in plastic container.
can be frozen up to 3 months.
